I am finishing up read the Catechism of the Catholic Church in one year. Great experience!
Next year it is the Catholic Bible in one year.
Here is a good website to get you started, with lots of options and advice.

With something as involved as the Catechism, I personally can’t follow a reading plan.
I find that some days, I can read 100-200 paragraphs easily. Other weeks, I can scarcely manage one. The quality of the catechism is inconsistent. The starts of each parts seem to be better than the ending, although the quality of parts 3 (life in Christ) and part 4 (prayer) are particular good throughout. Overall, it took about 5 months to get through and it was well worth it. Reading it on a tablet made it a great deal easier since it’s easy to pick up where you left off without a lot of shuffling of pages.
